Classic Canola French Fries

Canola Oil is a great choice for high heat cooking. Canola oil has one of the highest smoke points of all commonly used vegetable oil at 468F (242C), just a couple of degrees lower then peanut oil's smoke point.

Ingredients

  • 4-5 large potatoes, red or russet or sweet 4-5
  • 8 cups canola oil 2 L
  • Salt to taste

2 You may wish to increase the temperature slightly before adding the potatoes as the oil temperature will drop when food is added.
3 First Fry: Fry for 4-6 minutes to blanch. Remove French fries from canola oil with slotted spoon, drain on paper towels.
4 Second and final Fry: Just before serving, fry a second time for 3-4 minutes or until golden brown. Remove French fries from canola oil with slotted spoon. Drain on paper towels and season to taste. Serve with Remoulade and Honey Bee’s Dipping Sauce.
