Chubby Hubby Cookies

These massive peanut butter cookies loaded with chocolate chips and crushed pretzels are “heavily” inspired by the infamous Ben & Jerry’s ice cream flavor of the same name. We prefer to make these “man-sized” but feel free to make them any size you like. You can also make cookie bars by pressing the dough into a greased 9×13 pan, just don’t forget to adjust the baking time accordingly.

Ingredients

  • 1 1/2 sticks margarine
  • 1/2 cup peanut butter, creamy or chunky
  • 1 cup brown sugar
  • 1/2 cup Sugar
  • 2 large eggs
  • 2 teaspoons Vanilla extract
  • 2 cups Flour
  • 1 teaspoon Baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups chocolate chips
  • 1 1/2 cups salted pretzel twists, broken into pieces.

Directions

Preparation

1 Preheat oven to 350 degrees. Cream the margarine in a mixer. Add peanut butter and sugars and mix until combined and fluffy. Add eggs and vanilla.
2 Add flour, baking soda, cinnamon, and salt and mix well. Add chocolate chips and pretzels and mix until just combined.
3 Line 2 cookie sheets with parchment paper. With a large ice cream scoop, place 6 scoops of cookie dough on each sheet. Refrigerate for 15 minutes before placing in the oven.
4 Bake for 15-20 minutes until golden around the edges but still soft in the centers. Cookies will firm up when they cool.
