Chopped Broccoli Salad

This practically no mayo chopped broccoli salad gets it creaminess from a very ripe avocado. You don't have to worry about this salad going bad, but it won't last long enough anyways.

Ingredients

  • 4 cups broccoli florets, cut small
  • 1 ripe avocado
  • 1 lime
  • 1/2 cup finely chopped red onion
  • 2 teaspoons Gold's wasabi sauce (optional)
  • 2 tablespoons sliced toasted almonds (optional)

Directions

Place chopped broccoli in a large bowl.  Cut the avocado and spoon it out on top of the broccoli, squeeze the lime juice.  Using your hands work the avocado into the broccoli florets.  The best way to get the flavor into the broccoli and really mash up the avocado is to use your hands and massage the broccoli.  Once it looks a brighter green it should be good, add red onion, wasabi sauce and salt to taste.  Top with sliced almonds if desired.
