Chocolate Zucchini Muffins

These are not necessarily healthy, but it is nice to get some extra vegetables where ever you can.

  • 2 Eggs
  • 1 cup Sugar
  • 1/2 cup vegetable oil
  • 3 tablespoons unsweetend cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 11/2 cups whole wheat flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • Dash cinnamon, nutmeg, cloves and cardamom
  • 1/2 cup walnuts



1 Preheat oven to 350. Lightly grease 12 cup muffin tins. In a large bowl beat the eggs, beat in the sugar and oil.
2 Add the cocoa, vanilla, zucchini and stir well. Stir in the flour, baking soda, baking powder, salt and spices. Mix until moist.
3 Pour batter into prepared muffin tins. Sprinkle the walnuts over each muffin (my son loves to do this part as he makes sure every muffin get its share). Bake at 350 for about 20 minutes.
