Chocolate Pudding – Pareve
This dessert is wonderful for Shabbat or anytime after a meat meal. Top it with coconut whipped topping and wow!! Not Shabbat? Warm the pudding for 45 seconds in the microwave, and it’s a warm comforting dessert. Oh yum! Tip: If using for Passover, you’ll have to prepare as a dairy recipe, using potato starch and milk. Still makes for a wonderful dessert, dairy, of course.

Ingredients
- 1 cup white sugar
- 6 tablespoons unsweetened cocoa powder
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 5 1/2 cups Almond milk, Mocha Mix, or Soy Milk
- 4 tablespoons pareve margarine - Earth Balance recommended
- 2 teaspoons vanilla extract
Directions
In a saucepan, mix to combine the sugar, cocoa, cornstarch and salt. Place over medium heat, and stir in almond milk (or other parve milk such as Mocha Milk or soy milk). Bring to a slow boil and cook, stirring constantly, until mixture thickens enough to coat the back of a spoon.
Note: Be patient with the cooking of the pudding. It takes from 20 to 30 minutes for the pudding to reach the thickness of a rich consistency.
Remove from heat, and stir in margarine until blended through. Stir in vanilla. Fill 8 to 9 ramekins or dessert cups. Let cool briefly. Serve warm or chilledr in refrigerator until ready to serve.
