Chinese Quinoa Cakes
When you have leftovers, turn them into fritters. These Quinoa Cakes are so amazing. It was really fun making Chinese Egg Rolls for Passover last year, but for a lot of people it is not easy, but this recipe offers a fried appetizer that goes well with duck sauce and is easier and healthier.

- 1 cup leftover Quinoa, any recipe will do, here is mine
- 1 egg
- 1/4 cup matzo meal

This recipe looks great! If I want to make this recipe year round can I use bread crumbs instead of matzo meal? THanks!
Yes, but I would use panko.
