Ingredients
- 3 cups frozen hash browns, thawed
- 3 Tbsp. grated onion
- 3 stalks green onion, sliced
- 2 Eggs, beaten
- 4 tbsp. flour
- 1 tsp. salt
- 1 cup canola oil
- 1/2 cup mashed potatoes flakes
Directions
Preparation
1 In large bowl, combine all ingredients (not the oil)
2 Heat the oil in a large, heavy skiklet. I like using an ice cream scoop to measure out the amount of latke I put on to the pan. Cook over medium heat until brown on both sides.
