Chicken or Turkey Hummus

Ingredients
- 2 tablespoons olive oil, plus more for garnish
- 1 large onion, finely chopped
- 2 pounds ground chicken or turkey
- 2 tablespoons turmeric
- 2 tablespoons cumin
- Kosher salt
- Freshly ground black pepper
- Hummus for serving
- Paprika, for garnish
- Fresh cilantro leaves, for garnish
Directions
Heat olive oil in a large saute pan over medium high heat. Add the onions and saute until translucent. Add chicken and break up into small pieces with a wooden spoon. Add turmeric and cumin and cook until chicken is browned and cooked through. Season to taste with salt and pepper.
To serve, spread hummus to the edges of a large plate using the back of a spoon and drizzle with olive oil. Pile turkey in the center. Sprinkle with a light dusting of paprika and a few fresh cilantro leaves.
