Chicken Gumbo

Ingredients

  • 1 pound boneless skinless chicken breasts, cut in a medium dice (2-inch pieces)
  • 2 sausage or kielbasa links, diced
  • 10 ounce package frozen okra, thawed and sliced to 1-inch pieces (fresh okra is also fine if you have it)
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 1 green or red bell pepper, seeded and chopped
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon mustard powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (use 1/8 teaspoon if you don't like all the heat)
  • 1/4 teaspoon ground black pepper
  • 2 cup chicken broth
  • 15 ounce can diced tomatoes
  • 1 small can tomato paste
  • 2 - 3 cup cooked rice (white or brown)

Preparation

In a 5-quart slow cooker, combine the chicken and all remaining ingredients except the rice. Mix well to combine all ingredients and spices. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. Serve over white or brown rice.
