Ingredients
- 1 pound boneless skinless chicken breasts, cut in a medium dice (2-inch pieces)
- 2 sausage or kielbasa links, diced
- 10 ounce package frozen okra, thawed and sliced to 1-inch pieces (fresh okra is also fine if you have it)
- 2 celery stalks, chopped
- 1 large onion, chopped
- 1 green or red bell pepper, seeded and chopped
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon mustard powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (use 1/8 teaspoon if you don't like all the heat)
- 1/4 teaspoon ground black pepper
- 2 cups chicken broth
- 15 ounce can diced tomatoes
- 1 small can tomato paste
- 2 - 3 cups cooked rice (white or brown)
Directions
In a 5-quart slow cooker, combine the chicken and all remaining ingredients except the rice. Mix well to combine all ingredients and spices. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours. Serve over white or brown rice.

NOTE: I forgot in the instructions to specify that after adding the small can of tomato paste, fill the can with water and add that to the slow cooker as well. Thanks!
