Ceylon Cinnamon Ice Cream

Ingredients
- 3 cups Half and Half
- 3/4 cups sugar
- 1 Ceylon cinnamon stick (regular cinnamon is fine)

Preparation
1 Heat all ingredients until just simmering, stir until sugar is dissolved.
2 Strain out cinnamon and place in refrigerator until cold.
3 Pour mixture into ice cream maker. Let the machine run for at least 30 minutes until it appears fluffy.
4 Enjoy right away or freeze for a harder product.
