Celery and Tofu Salad with Scallion Oil
I haven't been able to find pressed tofu that is kosher and I am not sure how to make it, so I used this fried tofu that I have been finding at my Asian market and it is Circle K, but if you can't find it, the health food stores usually carry a baked a tofu that would be great in this. You just need something very firm and chewy.

Ingredients
- 1 8 oz. package fried, baked or pressed tofu
- 6 stalks celery (chinese celery prefferred)
- 3 tablespoons vegetable or canola oil
- 4 scallions
- 1 clove garlic
- 1 inch piece fresh ginger
- kosher salt to taste
Directions
Cut up tofu into thin strips. Wash and peel celery, then cut into matching size pieces.
Place oil, scallions, garlic and ginger in a blender or food processor and puree. Pour over the celery and tofu and sprinkle with salt to taste.
Enjoy right away or let sit in the fridge until ready to serve.

I wonder where I can find Chinese celery to make this – looks awesome! And I already have the rest of the ingredients in my kitchen.
I have had trouble finding it too and used regular celery, so I wouldn’t worry too much, just keep an eye out for next time.

This looks so interesting. I often get pressed tofu with a hechsher at a korean grocery (HMart) that is not too far from me. Will have to add this to my bookmarked recipes!

the nasoya brand that i see in all supermarkets is OK. i think trader joe’s has kosher tofu, too!
