Ingredients
- Dressing:
- 1/3 cup orange juice concentrate (undiluted)
- 2 tablespoons lime juice
- 11/2 teaspoons minced habanero chile
- 1/2 teaspoon salt
- Salad:
- 3 large carrots, shredded
- 2 cups halved California seedless grapes
- 11/2 cups julienned jicama
- 1/2 cup minced fresh cilantro
- 1/2 cup coarsely chopped salted peanuts
Directions
Preparation
1 In a small bowl, whisk together all dressing ingredients. In a separate serving bowl, combine salad ingredients. Pour dressing over the top. Toss to incorporate.
