Carrot Kugel

Ingredients
- 1 bag of baby carrots
- 1/2 cup whole wheat flour
- 1/2 cup white flour
- 1/2 cup firmly packed brown sugar
- 1/2 cup Granulated sugar
- 11/2 tsp. baking powder
- 1/2 cup applesauce
- 2 large eggs
- 1 tsp. vanilla
- shredded carrots for top
Directions
Preparation
1 In food processor, puree carrots, add all other ingredients, pulse until combined.
2 Preheat oven to 350. Spray a 9-inch springform pan or muffin tin with cooking spray.
3 Pour batter into pan, spinkle shredded carrots on top. Bake for about 45 minutes or until set in the middle.
