Calypso-Fish Lettuce Wrap Steamer

Seasoned, pickled herring with julienne carrot, zucchini, red pepper and green onion in a spicy garlic sauce served in a steamer with lettuce leaves.

Ingredients

  • 1 jar Vita Pickled Herring
  • 1/2 cup Carrot, julienned
  • 1/2 cup Zucchini, julienned
  • 1/2 cup Red Pepper, julienned
  • 1/2 cup Green Onion, thinly sliced on a bias
  • To taste Salt and pepper
  • 1 Tbsp Soy Sauce
  • 1/4 cup Extra-virgin olive oil
  • 1/2 cup white wine
  • 2 oz Butter
  • 1 tsp Garlic, minced
  • 1 Tbsp Chili Flakes
  • 16 each Lettuce Leaves

Preparation

1 In a large work bowl, combine the pickled herring with the julienned-carrot, zucchini, red pepper, and green onion; season lightly with salt and pepper.
2 In a separate bowl, combine remaining ingredients and whisk to combine.
3 Cut out 4 rounds of parchment paper into 10” circles. Place the herring mixture in the center of each round distributing it evenly among the 4 rounds.
4 Pour 2 oz of the sauce into each round and fold it over on itself, pinching the edges together to form a pocket.
5 Place the pockets on a sheet-tray and bake at 375°F until vegetables are cooked through, about 8-10 minutes. Open the pockets at the table when ready to serve along with lettuce leaves.
