If you’re ready to embark on your own adventures in fermentation, you’re in luck – the process couldn’t be easier. All you need are glass or plastic jars to ferment in.
- 2 quarts bottle of grape juice
- 1/8 teaspoon champagne yeast (Available online, with a hechsher, from the Red Star Yeast Company. Look for “Pasteur Champagne” yeast.)
- 4 clean (20 ounce) plastic soda bottles
1. Add the yeast to the large bottle of grape juice. Seal tightly and shake vigorously to mix the yeast into the juice.
2. Using a funnel, divide the juice evenly across the bottles, leaving at least one inch of space at the top of each bottle for the gas to collect. Seal the bottles tightly and leave unrefrigerated in a dark place. Monitor their progress by squeezing the bottles.
3. It will take about 4 days, depending on the temperature at which the bottles are kept, while carbon dioxide builds up inside the bottle. when the bottles are rock hard it is time to move them to the refrigerator.
4. Refrigerate the finished bottles for at least one week prior to opening, to cease fermentation and gas production. Fermentation levels will vary, so be sure to open the bottles slowly, over a sink. The contents may foam and gush out.
