Ingredients

  • Crust:
  • 1/4 c. margarine , softened
  • 2 c. flour
  • 6 T. sugar
  • 1 tsp. baking powder
  • 2 eggs 1 (20-oz) can crushed pineapple, well drainedFilling:
  • 1 lb. cream cheese , softened
  • 4 Eggs
  • 1 1/2 C. Sugar
  • 3 c. milk
  • Juice of 1 lemon
  • Cinnamon
  • 6 T. flour

Preparation

1 Crust:  Mix all ingredients (except pineapple); roll and fit in a 13x9 inch pan. Spread the well-drained pineapple on the crust.

2 Filling: Combine 1 pound cream cheese with 1 1/2 cups sugar.  Add the lemon juice, flour and 4 eggs, one at a time.  Beat until smooth. Slowly add milk. Pour gently onto pineapple spread crust. Sprinkle with cinnamon.

3 Bake at 350 for 50 minuets. Turn oven off; leave cake in the oven for another 50 minutes. Enjoy!
