Brown Rice Broccoli Casserole
We made this as a main dish for a potluck Shavuot picnic this year and one pan (there are two pictured here) served 12-16 people.

Ingredients
- 1 tablespoon butter
- 1/4 cup flour
- 1 teaspoon mustard
- 1 cup skim milk
- 2.5 cups cheddar cheese
- 3 cups brown rice raw
- 3 cups broccoli cooked
- Salt and pepper to taste
Directions
Preheat oven to 350. Cook rice.
Grease casserole pan, we used a 9 x 13 inch.
Mix milk, mustard and season with salt and pepper, bring to a simmer 4 minutes, whisking occasionally. Whisk in flour until thickened. Add 2 cups of cheddar cheese; stir until mostly melted; remove from heat.
Stir in rice and broccoli florets, pour into casserole pan, sprinkle remaining 1/2 cup cheese over top. Bake 30 minutes until browned.
