Ingredients
- 1 egg
- Teaspoon fat-free greek yogurt
- Handfull fresh spinach (frozen will likely work as well)
- sea salt
- Black pepper
- rosemary
- Sandwich thin or bread of your choice
Directions
Preparation
1 Heat nonstick pan on medium, add egg and cover, cooking sunny-side up style
2 Toast bread if desired
3 mix yogurt, spinach and spices in microwave-safe dish and heat 20 seconds
4 Top bread first with spinach-yogurt mixture, then with runny egg.
