Ingredients
- 4 cups fresh blueberries
- 2/3 cup sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon margarine
- pastry dough enough for 2 pie crusts or frozen pie crusts
Directions
Mix together blueberries, sugar, flour, lemon juice and melted margarine.
If using pastry dough, line a 9 inch pie plate with dough. Pour mixture into pie crust. Cover with second pastry or crust and cut a few slashes in top; or cut pastry into strips and prepare lattice top. Seal edges well and flute if desired. Place in fridge for 30 minutes to chill dough. Brush lightly with soymilk and sprinkle with sugar. Bake in 425°F oven for 15 minutes, reduce heat to 35o°F and bake about 40 minutes longer or until crust is golden.
Enjoy with Vanilla ice cream or non dairy ice cream.
