- 1 cup :all-purpose flour
- 1/2 cup :whole-wheat flour
- 2 teaspoons :baking powder
- 1/2 cup :dried blueberries
- 1/2 cup :finely chopped pecans, toasted
- 3 tablespoons:light brown sugar
- 1 teaspoon :ground cinnamon
- 1/2 teaspoon :salt

Preparation
- To make the mix:
- Layer the all-purpose flour, whole-wheat flour, baking powder, blueberries, pecans, brown sugar, cinnamon and salt in a 1-quart glass jar.

- Instructions to make the pancakes:
- Whisk 2 large eggs, 2 large egg whites, 1 1/2 cups buttermilk and 2 tablespoons canola oil in a medium bowl. Put Blueberry-Pecan Pancake Mix in a large bowl and mix.
- Make a well in the center of the mix; add wet ingredients and stir until just combined.
- Use about 1/4 cup batter for each pancake.
