Blood Orange & Beet Salad

  • Ready Time : 15 min


8 Servings


  • 5 blood oranges, cut in rounds
  • 5 baby yellow beets, cooked, cut in quarters
  • 5 baby red beets, cooked, cut in quarters
  • 1/2 fennel, sliced
  • 1 red onion, sliced
  • 2 watermelon radishes
  • Olive oil, as needed
  • Salt and pepper, as needed
  • 1 teaspoon champagne or rice wine vinegar
  • Fresh dill for garnish


1 Combine all salad ingredients and toss with olive oil, salt, pepper and a teaspoon of champagne vinegar.
2 Finish with a dill garnish
