I saw this cupcake recipe in "Every Day with Rachael Ray" and was very intrigued. Goat cheese in cupcakes? Okay!

Ingredients

  • Cooking Spray
  • 6 oz. soft goat cheese
  • 1/2 cup sugar
  • 2 oz. chocolate
  • 1 cup Basic Batter (recipe below)
  • BASIC BATTER:
  • 1 cup flour
  • 1 Tbsp + 1 tsp baking powder
  • 1/4 tsp sugar
  • 1/4 tsp salt
  • 1 cup milk
  • 3 beaten eggs
  • 5 Tbsp. melted butter
  • 1 Tbsp vegetable oil

Preparation

1 Prepare Basic Batter and set aside.
2 Preheat oven to 325 degrees.
3 Grease a 6-cup nonstick muffin pan with cooking spray and set aside.
4 Puree the basic batter, goat cheese and sugar.
5 In a bowl, microwave the chocolate until melted, mixing every 30 seconds (about 1 minute in all). Let cool slightly.
6 Whisk 1/4 cup of goat cheese batter in to chocolate and divide among the muffin cups.
7 Top with the cheese batter.
8 Bake until slightly firm to the touch, 25-30 minutes.
