Bite Sized Zucchini Kugel
I made these the other day in small muffin tins and they were so cute and delicious. I am sure they would be great cooked up in larger pan, but I recommend them in this tiny bite sized package.

Ingredients
- 2 large zucchini, grated and drained of excess liquid
- 1 large onion, chopped
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/4 cup oil
- 1 large egg
- 1/2 teaspoon pepper to taste
Directions
Mix all ingredients together.
Bake in around 12 greased mini muffin tins at 350 for 30 minutes or until cooked through.

The recipe looks delicious – but I was curious do you boil the zucchini first? The recipe directions do not indicate one way or another ….

To answer your question – no boiling first, but it should say grated.
I made these for Shabbat and found that you need LOTS more eggs (4) to help hold it together. I also found that it needed more cooking time (1 hour). The taste was good and my guests enjoyed them.
I made this last night for shabbos, and it was a big hit! I found it a little greasy, so I would cut down a bit on the oil, but overall, it was delicious! I will definitely be making this again. Thanks!
