Recipe

Best Ever Morning Chocolate Muffins!

These muffins will be gone within moments.... trust me!

Times

  • Prep Time : 5 min
  • Cook Time : 20 to 25 min
  • Ready Time : 25 min

Servings

1 dozen

Ingredients

  • 1 + 3/4 cups flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3/4 cup chocolate chips
  • 3 tablespoons dark cocoa powder
  • 3/4 cup sugar
  • 1 XL egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coffee dissolved in 1/4 cup hot water
  • 3/4 cup whipped cream {not whipped} can use soy milk as a sub

Directions

Preheat oven on 300 convection bake.In a bowl mix dry ingredients with a spoon in another container mix wet ingredients with a fork add to dry ingredients mix slowly just until incorporated {do not over mix as is the rule by muffins & breads so they don’t stiffen!} .Place 12 to 14 medium size cupcake holders in the muffin trays….Spoon in batter sprinkle some chocolate chips on your muffins….Bake for abt 20 to 25 min {do not over bake! center should be a little softer.} Serve warm and enjoy with a cup of milk or whatever! you can keep the recipe for up to
3 days outside cover the muffins with a silver foil so the moisture will stay! or freeze and rewarm in microwave!

    Sorry looks like I forgot to list oil for this recipe……add to liquids 1/3 cup + 2 tablespoons of oil!
