Beer Battered Cod with Panko

Ingredients
- 1/2 cup buttermilk
- 1 lb. cod fillets, cut into large pieces
- 1/2 cup panko (Japanese bread crumbs)
- 1 cup flour
- 1 12 oz. bottle of beer
- 1 teaspoon salt
- 1/2 cup chopped parsley
- Oil for frying
Directions
Preparation
1 Soak fish in buttermilk.
2 Mix panko, flour, beer, salt and parsley.
3 Heat oil in deep frying pan. Dredge fish into batter and then put into hot oil. When browned, flip over and then remove onto paper towels.
4 Serve wtih sauce of your choice, I like tartar sauce.
