Beef Back Ribs with Vinegar Based BBQ Sauce (indoors)

I adapted this flavorful indoor ribs recipe from a recipe by Thomas Keller. I had never had a vinegar based meat sauce before and now that I have I feel like my taste buds have been opened to a new world of yum. It is much lower in calories than traditional BBQ sauce and it is really wow good.

  • Prep Time : 40 min
  • Cook Time : 3 hour
  • Ready Time : 3 hour, 40 min

    For the Rib Rub:

    • 1/2 cups dark brown sugar
    • 1 1/4 tablespoons salt
    • 2 teaspoons paprika
    • 1/2 teaspoon cayenne pepper
    • 1/2 tablespoon garlic powder
    • 1/2 tablespoon cinnamon
    • 1 tablespoon chili powder

    For the Ribs

    • 2 packages around 5 pounds KOL Foods Back Ribs

    For the Vinegar-Based BBQ Sauce:

    • 1 cup cider vinegar
    • 1/2 yellow onion, sliced thin
    • 1 jalapeno, sliced thin
    • 1/2 tablespoon honey
    • 1 teaspoon brown sugar
    • 1 teaspoon ketchup
    • 1 teaspoon salt
    • 1 teaspoon chili powder
    • Pinch black pepper

Mix all the ingredients for the dry rub thoroughly by hand.  Rub generously over the ribs and place ribs in a ziplock bag to marinate overnight in the fridge.

Prepare the sauce by combining all the ingredients and let it sit in the fridge overnight.

At least 30 minutes before cooking, remove ribs from fridge to bring to room temperature.

Preheat the oven to 300 degrees.  Place ribs in a pan large enough to lay racks in one layer.  Spoon over some of the sauce until it is all well basted.  Cover the pan with foil and cook for 1 hour.

Remove from the oven, pour out the sauce under the ribs to remove some of the fat that has melted.  Then spoon over more sauce with the onions and peppers re-cover and cook for another hour.  Remove foil, pour over the rest of the sauce and cook for a final 30 minutes  uncovered.  Remove from oven and enjoy hot.

    1. What ribs are kosher. I only see short ribs. What do I ask for when I shop for the ribs.

      • Most ribs are kosher I believe as long as you buy them from a kosher butcher. Any large ribs should work for this recipe.

    2. I am not much of a meat eater, but I LOVE beef rib! Anything based on Thomas Keller has to be good too.

      • Hey, Ronnie,

So nice to see you pop up here. No surprise though that you’d be on this site.
