Ingredients

  • 3 eggs
  • 4 teaspoons baking powder
  • 4 teaspoons vanilla sugar
  • 1 cup semolina
  • 1 cup flour
  • juice of 3 oranges
  • 3/4 cup oil
  • 1 cup coconut flakes
  • 1 cup sugar
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cup boiling water
  • silan (date syrup)
  • nuts

Preparation

  1. Preheat the oven to 350F. In a mixing bowl combine the eggs and baking powder with a hand mixer. Add the vanilla sugar, semolina, flour, orange juice, oil, coconut flakes and sugar and mix. Don’t over mix it! Bake in a greased pan for 30 minutes.
  2. In a small saucepan, bring the honey, lemon juice and water to a boil and cook for 2 minutes and cool.
  3. Once you remove the cake from the oven, while it is still hot, dredge the syrup on the cake a few tablespoons at a time. Let the cake absorbs the syrup and continue with the rest of the syrup in the same way.
  4. Serve the cake with silan and nuts.
