Banana Cranberry Streusel Muffins

Ingredients

    Streusel:

    • 1/3 cup brown sugar
    • 3 tablespoons all-purpose flour
    • 1/8 teaspoon cinnamon
    • 1 tablespoon butter

    Muffins:

    • 6 tablespoons butter
    • 1-1/2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 3 bananas, mashed
    • 1/2 cup sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 cup dried cranberries

    Directions

    Preheat the oven to 400 degrees. Lightly grease 10 muffin cups. Melt the butter and set it aside. Mix the flour, baking soda, baking powder, salt and cinnamon together in a bowl. In another bowl mix the bananas, sugar, egg and vanilla extract until well blended. Stir in the melted butter and cranberries. Spoon the banana mixture into the flour mixture and stir until just until combined. Spoon the batter into the prepared muffin cups. Top with the streusel mixture evenly over each muffin. Bake for 18-20 minutes, or until a cake tester inserted into center of muffin comes out clean.

    2. I never made this without sugar but can tell you that I often cut down or cut out sugar in many recipes. Muffins dont necessarily need sugar so I think it would be fine without. Certainly would work without the sugar. If I made these sugar free I would probably add slightly more vanilla extract and/or grated fresh orange peel (maybe one teaspoon).
