Banana Bread

  • 1/2 cup margarine
  • 1 1/4 cups sugar
  • 2 large eggs
  • 1/2 cup light sour cream
  • 1 cup mashed ripe bananas (over-ripe is best)
  • 1 teaspoon Baking soda
  • 2 cups all-purpose flour **
  • 1/4 cup (can use more) mini chocolate chips, optional



1 Preheat oven to 350°F.
2 In a large bowl with an electric mixer, cream margarine and sugar together. Add eggs and beat until blended. Add sour cream and bananas; blend.
3 Mix soda with flour and add to mixture. Beat on low setting until just mixed, do not over mix. Stir in chocolate chips.
4 Pour into a 9 x 4 x 4-inch loaf pan, which has been sprayed with non-stick spray (may flour pan lightly).
5 Bake at 350°F for 50 to 60 minutes or 340°F in a glass pan for 65 minutes or until toothpick comes out clean. Let stand in pan about 5 minutes. Remove from pan and cool on cooling rack.
