Baby Greens, Pear, Walnut, And Blue Cheese Salad

A simple flavorful salad with a an easy homemade salad dressing.

Servings

6 servings

Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 Tablespoon Dijon mustard
  • 1 medium shallot, minced
  • 1-1/2 teaspoons chopped fresh thyme
  • 1/2 cup olive oil
  • 1 (5-ounce) bag mixed baby greens
  • 2 large ripe pears, halved, cored, thinly sliced lengthwise
  • 1 cup crumbled blue cheese
  • 1 cup walnuts, toasted, coarsely chopped

Directions

  1. In a small bowl combine the lemon juice, mustard, shallot and thyme. Whisk to blend. Gradually whisk in oil.
  2. Season dressing to taste with salt and pepper. Toss greens in large bowl with enough dressing to coat. Top with pears, cheese and walnut.
  3. Drizzle lightly with remaining dressing and serve. Makes 6 first-course servings.

    this salad worked out great! I changed so much though: pecans instead of walnuts, goat cheese instead of blue cheese (too hard to find), & instead of mixed greens, I used artisan romaine lettuce leaves & filled them with a mixture of the rest. it was so good! thanks for the great ideas.

    I just realized that your directions say nothing about adding the pears, cheese, and nuts. Just a friendly suggestion: perhaps you want to amend that so it can be clearer. Thank you.
