Avocado Salad Dressing


  • Ready Time : 0 min



  • 2/3 cup olive oil or vegetable oil
  • 5-6 tablespoons red wine vinegar
  • 1 small ripe avocado, peeled and diced
  • 1 1/2 teaspoons prepared mustard, optional leave out on Passover
  • 2 tablespoons chopped fresh parsley
  • salt and freshly ground black pepper to taste


Place the ingredients in a blender or food processor and process until thoroughly blended. Makes about one cup.
