Avocado Pita Pizza

This recipe was adapted from a sandwich served at a health food restaurant in Miami Springs several years ago. I'm not sure what their name for it was but it's construction is similar to a pizza, hence the name I've given it.

Ingredients

  • 1 ripe, medium size avocado
  • 1 cup grated carrots
  • 1 cup bean sprouts
  • 1/2 cup grated muenster cheese
  • whole wheat pita bread, split
  • seasonings/spices of choice

Preparation

1 Mash avocado with seasonings of choice. I like to add some red pepper flakes and just a little sea salt. My husband doesn''t like to add anything. The new Fiesta Lime flavor of Mrs. Dash is good too.

2 Spread desired amount of smashed avocado on one half of pita bread. Top with grated carrot and about 4 TB muenster cheese.

3Broil for just a couple minutes until cheese melts.

4Top with bean sprouts and enjoy.
