Auntie Annabelle’s Crispy Sesame Chicken Pieces

  • 3 cups crushed Parve “Ritz” style crackers
  • 1 1/2 cups sweetened flaked coconut divided
  • 1 cup sesame seeds divided
  • 1/2 cup mayonnaise
  • 1-2 tablespoons of water
  • 1 teaspoon dry mustard
  • 1 teaspoon dried minced onion
  • 3 chicken breast halves, cooked and cubedSauce:
  • 1/2 cup mayonnaise
  • 3 tablespoons Honey
  • 1 tablespoon of Dijon mustard



1 Preheat oven to 425.
2 In a deep mixing bowl, set aside one half of the dry ingredients (crackers, coconut flakes, and sesame seeds); Place the other half of the dry mixture in a separate container for later use.
3 In a smaller bowl, combine mayonnaise, water, mustard and minced onion (Make more as needed – the mixture should be a somewhat thick paste but you can use water to make it easier to work with).
4 Coat the chicken pieces with the mayonnaise mixture, then coat in the dry crumb mixture. (Once the dry mixture gets too gloppy with the mayonnaise coating, discard and begin again with the 2nd half that you set aside)
5 Place on a greased baking sheet. Bake at 425 degrees F for 12-15 minutes or until lightly browned.
6 To make the sauce: Mix the mayo, honey, and mustard and refrigerate before serving.
