This looks amazing! I must try this for Shabbat.

This looks great but the recipe is short on details. How long do you marinate the chicken? How many pieces of chicken will it cover? Can you cook or broil it in the oven or does it need to be grilled?

  3. @belerner:
It’ll cover about 3 lbs of meat.
This particular marinade purposely has no acid like citrus or vinegar, so you could probably let it sit for a long time without “burning” the meat (it’s happened). You want a minimum of 2 hours. I don’t see why it wouldn’t work baked, roasted or broiled. I just like the grill best. :)

Can I grill skinless chicken quarters? Will it dry out without the skin?

What can I substitute for the ginger? Thank You
