Aloo Gobi

This classic Indian recipe has cauliflower and potatoes and is pure comfort food with tons of spices and flavor.


  • Prep Time : 10 min
  • Cook Time : 30 min
  • Ready Time : 40 min


4-6 Servings


  • 1/4 cup vegetable oil
  • 1 large onion, peeled and cut into small pieces
  • 1 bunch fresh cilantro or parsley, chopped
  • 1 small green chili, chopped into small pieces or 1 tsp. chili powder
  • 1 large cauliflower, leaves removed and cut into small florets
  • 3 large potatoes, peeled and diced
  • 2 large tomatoes, diced
  • 2 tbsp. ginger, minced
  • 2 tbsp. garlic cloves, minced
  • 1 tsp. cumin seed
  • 2 tsp. turmeric
  • 1 tsp. salt
  • 2 tsp. garam masala
  • 1/4 cup of water


1. Heat vegetable oil in a large saucepan.
2. Sauté onion, garlic, and ginger for 3-5 minutes.
3. Add tomatoes and spices.
4. Add chopped cilantro or parsley.
5. Add chopped chilies (according to taste) and cook sauce for 5 minutes.
6. In a separate pot, steam potatoes and cauliflower in a ¼ cup of water.
7. Cover and allow to simmer for 20 minutes or until potatoes are cooked.
8. Pour sauce over potatoes and cauliflower until evenly dispersed.
9. Garnish with cilantro or parsley if desired.
