Almond Cookies

These cookies are easy to make and come out great every time. Make them with your kids and let them stick the almond in the middle.

  • Ready Time : 0 min

2 dozen cookies

  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup sugar
  • 1 cup margarine
  • 1 egg
  • 2 teaspoons almond extract
  • 1 handful bleached almonds
  • 1 egg, beaten for glaze

Mix dry ingredients in a bowl. In a separate bowl, mix together margarine, egg, and almond extract. Combine wet and dry ingredients and mix well. Roll dough into balls about 1 1/2 inches wide. Place on cookie sheet, leaving 2 inches between each ball. Press 1 almond into the center of each cookie. Do not flatten cookie. Brush beaten egg onto cookies and bake in a preheated 350 oven for 10-20 minutes, depending on how crunchy you like them.
