Spinach and Cheddar Frittata with Fries

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 1 small onion, diced
  • 1 cup frozen spinach, defrosted and squeezed dry
  • 6 large eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons water
  • 1 (20 to 22-ounce) bag frozen fries, cooked according to package directions

Directions

Preheat oven to 375 F.

Heat olive oil in a 10-inch ovenproof skillet over medium high heat. Add garlic and onions and sauté for 4 to 6 minutes or until fragrant. Add spinach and cook 2 minutes more.

In a medium bowl, combine eggs, cheese, salt and pepper with water and whisk well. Pour into skillet and cook over medium heat for 5 minutes. Transfer pan to oven and cook 10 to 15 minutes or until eggs are set in the center. Let cool 5 minutes.

To serve, invert onto a cutting board and slice into 6 wedges. Serve with fries.
