Ingredients

  • 1 pound dark meat cutlets, cut into 1/2” thick 2” long pieces
  • 1/4 cup shawarma seasoning
  • 2 tablespoons olive oil
  • 2 pitas, cut in half and opened
  • 1 cup chummus
  • 1/2 hot house cucumber, sliced
  • 1 cup shredded lettuce
  • 1 (1 pound) bag frozen French fries

Directions

  2. To assemble pitas, spread about 3 tablespoons of chummus between 4 open pitas and layer with cucumber. Divide chicken between pitas and top with shredded lettuce. Serve with fries and remaining chummus.

Where do I get shwarma seaoning? Is there a substitute for it?

Pereg makes a shawarma seasoning/spice as do some other companies. In addition some butchers already season cutlets or chicken fingers with shawarma seasoning. But if you can’t find it you can make your own: 1T each coriander, cumin, cardamom, chili powder, steak seasoning plus 1t (smoked) paprika — should do the trick.

I got some wonderful Schwarma seasoning at Jo El’s Specialty Foods in St. Petersburg, FL. The label was entirely in Hebrew so I knew what it was but never really knew how much to use. Now I know….

Thanks for the recipe – I absolutely love schwarma!

One more comment – Schwarma is great with Tzatziki – of course I add Tzatziki to most of my pita sandwiches…..

    • Do you make a parve Tzatziki? I have made one before with parve sour cream, I love it also. That reminds me I have to make some now…

This recipe is simple and delicious. We kicked it up a bit by using jalapeno hummus. Yummy!
