Lemon Herb Roasted Chicken in the Slow Cooker

Times

  • Prep Time : 10 min
  • Cook Time : 5-6 hours min
  • Ready Time : 15 min

Servings

4-6 Servings

Ingredients

  • 4-6 pounds roasting chicken
  • 1/2 cup onion, chopped
  • 1-2 tablespoon olive oil
  • juice of one lemon
  • 4 sweet potatoes, halved
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh parsley
  • 1/2 teaspoon dried thyme
  • 1/3 teaspoon paprika

Directions

Place the onion in the cavity of the chicken and rub the skin with the oil.  Place chicken in the slow cooker.  Squeeze lemon juice over chicken and sprinkle with remaining seasonings.  Add sweet potato halves.  Cover and cook on Low 8-10 hours or on HIGH 4-5 hours.
