Ingredients
- 2 large or 4 small cucumbers (about 1 ½ lbs), chopped
- 4 ripe red tomatoes, chopped
- 1/4 cup chopped parsley
- Juice and zest of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
Directions
Combine all ingredients in a bowl and toss. Enjoy!
