Hearty Onion-Veggie Sandwich

Ingredients

  • 2 packages fat-free cream cheese (3 ounces each)
  • 18 slices multi-grain bread
  • 1 large red onion, thinly sliced (about 12 ounces)
  • 1 cup sliced cucumbers, marinated in French dressing
  • 12 crisp lettuce leaves
  • 12 tomato slices
  • 6 ounce thinly sliced cheddar cheese
  • 1½ cup alfalfa sprouts (optional)

Directions

Spread cream cheese evenly over 6 slices of bread. Top with half of the onion slices and all the cucumbers. Stack with lettuce leaves, sliced tomato and a second slice of bread. Lay cheddar over second bread slice, then add sprouts and remaining onions. Top with third slice of bread. Cut sandwiches in half and secure with picks.

    If you soak the onions slices in cold water–then dry thoroughly–they will be less sharp/sweeter.

    I serve this a lot for Shabbat lunch but I also put out Pesto Wraps and alfalfa sprouts in addition to the ingredients listed. It’s such an easy lunch to prepare on Friday to serve on Saturday. I use a multi-divided tray and prep all veggies on Friday.
