Fried Zucchini – Concia Romana

Ingredients

  • 1 pound zucchini
  • olive oil
  • salt
  • 1/4 cup vinegar (red wine or apple cider)
  • 4 cloves garlic
  • parsley

Directions

Cut the zucchinis obliquely, dry them very well, ideally on a towel in the sun for a few hours.

Heat a large pan with a thin layer of oil.  When the oil is hot start to fry the zucchini.  When they begin to brown flip them over then remove to a serving platter or bowl and fry the rest of the zucchini.

For each layer put some salt , garlic, and parsley (to taste).  Add the vinegar to the pan of oil and heat for a minute before pouring over the zucchini.
