Fig, Goat Cheese and Mint Salad

Times

  • Ready Time : 10 min

Servings

4 Servings

Ingredients

  • 1/2 cup of toasted pecans chopped finely
  • 6 oz of soft 'Natural and Kosher' goat cheese in room temperature
  • 8 figs
  • Mint leaves

Directions

Place the pecan in a shallow dish. With your hands, form the goat cheese into 12 equal balls.

Roll the balls one at a time into the pecans, turning to coat completely.

Cut the figs in half, and arrange nicely on a plate. Place the goat cheese balls on top of the figs. Decorate the plate with mint leaves. Serve and enjoy!

  1. I make something similar in the fall, but where do I find fresh figs in NJ in February? It’s such a perfect combination and always a hit at parties

  2. OK, made with what I’ve got in the house – ground almonds,Israeli dates, goat cheese.Split the dates, put a ball of the cheese/almond on each one. Addictive. Don’t know if it will make it to the salad stage.
