Jamie Geller is the only cookbook author who wants to get you out of the kitchen – not because she doesn’t love food – but because she has tons to do. As “The Bride Who Knew Nothing” Jamie found her niche as everybody’s favorite cook next-door. Specializing in scrumptious meals that are a snap to prepare, she authored the Quick & Kosher Cookbook series and is co- founder of the Kosher Media Network, which recently launched the Joy of Kosher with Jamie Geller magazine and companion website JoyofKosher.com, a social network for foodies. Jamie hosts the popular Quick & Kosher cooking show online at youtube.com/joyofkosher and on-air on JLTV. Jamie and her “hubby” live in Israel.   • I really enjoyed your Joy of Aliyah videos and the Joy of Kosher website, including your great recipes. Any chance you may have a kosher Tex Mex recipe or two? When you and the family moved to Israel did you give up your American citizenship? I love Texas, but perfectly understand how a Jewish family would want to move to Israel.   • Dear Mrs. Geller, It is wonderful that you are moving here in August! I'm originally from NYC and have been living here since 1971 - and wake up every morning thanking G-d that I came on aliyah. Life here is VERY different - and as a cook, you will find that many, many products you are used to using, simply do not exist here, but we manage with substitutes as far as possible, and leave out what we can't find. Congratulations again on your move!

  • Hi Simcha - you can put your shredded potatoes in water and to keep them from browning and then give them a good!!! squeeze before using. But I prefer to work really quickly - check out this video for my tips - for best potato kugel results: http://www.youtube.com/watch?v=HYgYymFJ7fo Once the kugel is cooked lasts in the fridge for a good few days. just rewarm before serving.

  • Hi Jamie,i'm a HUGE fan of your show. I have a question though : How do you make kugel in advance without the potatoes getting brown once they're shredded? My mom and I want to make potato carrot kugel, but need to make it ahead of time. Any ideas?

  • Hi Mattie - Joy is the brand I use for my blue colored (and plain) cake cones. http://www.joycone.com/ You will most likely find the fun colored cones in the mainstream supermarket chains not the kosher ones -- I don't find that the kosher supermarkets carry the colorful selection.
