The following recipes are great to have on hand for those days when you do not have the time or patience to spend hours in the kitchen preparing dinner.  Some recipes take minutes to prepare but require you to be at home while the food is cooking; making you feel like a slave to the kitchen.  The following recipes are quick to put together and dinner will be on the table in no time yet taste like you’ve spent hours in the kitchen.

Many chefs claim that it takes hours to make a Bolognese. Try this quick version and you may change your mind.

Soy sauce is the secret weapon in this recipe. It makes the chicken very moist and tender. In addition, the apricot dipping sauce compliments all aspects of this dish.

The green scallions, brown pecans and pink salmon make for a nice presentation. Most importantly, the taste of this dish is incredible; the crunch of the nuts and panko and the tanginess of the honey mustard sauce make a great dish.

This week, if you live in the North East and have kids in school you are counting down the days until school is over.  Not sure if it is a good thing or a bad thing, depends on your Summer plans I guess.  Either way let’s keep up the light and easy dinners.

For Monday let’s prove we can eat pasta and be healthy with Florentine Ravioli at under 300 calories a serving, we can all enjoy and we get the added nutrients from the super vegetables, spinach.  If you need more filler try a Vegetables Soup.

On Tuesday let’s try a Roast Chicken Dinner made easy with Roasted Chicken Breast with Peach Chutney serve alongside fresh Green Asparagus with Peppers and Pine Nuts and if needed add on some Brown Rice.

Turkey Sausage and Lentil Soup

On Wednesday let’s try Jamie’s recipe for Turkey Sausage and Lentil Soup – a one pot meal.

Vegetarian Cobb Salad

Thursday as we begin to prepare or think about preparing for Shabbat let’s stick with a salad that eats like a meal – Warm Salmon Salad (main image) or if you are up to some adventure try this Vegetarian Cobb Salad.

Hope you had a great Shavuot/Memorial Day weekend!  Hopefully you got to relax a bit and hopefully we can sail into Summer without too much stress.  We have been eating a lot of dairy, so this week we can bring back the meat, but still keep it light and healthy and since we are getting a late start, it is already Tuesday, head to the store early and add a Rotisserie Chicken to your list, let’s make tonight the easiest of all.

Starting our late week with a store bought Rotisserie chicken that we can shred up and put into lettuce cups.  You can also use this recipe as a guide for a large chicken salad.  Serve alongside Oat Groats with Carrot, Scallions and Raisins.

Ginger Curry Chicken Lettuce Wraps with Rainbow Coleslaw

Wednesday we can go South of the Border with Poblano & Skirt Steak Fajitas, the quick cooking steak and vegetables make this dinner a snap to prepare.

Thursday already? It is always a great pizza night, but if you can’t stomach anymore cheese yet, try these traditional Laham b’Ajeen – mini meat pizzas.  Serve with Lib Kusa (Squash and Onions) or your favorite vegetable soup, maybe this Moroccan Fava Bean.

This week begins the month of May.  The  weather will really begin to warm up and we can start taking out the Summer clothes.  This is the best time of year to enjoy eating outside, whether you fire up the grill or bring your food out to a picnic, let’s plan to eat out this week.

On Monday, let’s toss up this Stir-Fried Tofu with Soba Noodles, great hot or cold, it travels well to the porch or the park.  Pair with Baby Bok Choy.

Tuesday invite over some friends for a laid back BBQ.  We know it’s a school night, but it’s May! Make this Zaatar Grilled Chicken with Grilled Summer Flatbread (or just grill some store bought) and simply Grilled Asparagus and maybe throw some pineapple on for dessert.

On Wedensday let’s get sandwiched with Jamie’s Roast Beef Sandwiches with White Bean Salad.  Perfectly, quick dinner.

On Thursday let’s go Japanese with Miso Soup and Homemade Sushi. Serve some sweet mango for dessert.
