Fast Food Salt Content Different in Other...

We all know how bad fast food is for us. It’s generally high in calories, high in fat and the salt content is tremendously high. It’s convenient, but so bad for our health.

Dr Norman Campbell, of the University of Calgary in Canada, worked on a recent study that compared the salt content of fast food in six different countries.

One serving of Chicken Nuggets from a popular fast food chain, for example, came with 1.5 grams of salt (or 600 milligrams of sodium) in the U.S. and 1.7 grams of salt (680 mg of sodium) in Canada. That compared with just 0.6 grams of salt (240 mg of sodium) in the UK.

The chicken nuggets served up in Australia, France and New Zealand had salt levels that fell somewhere in between.

Fast food burgers contained an average of 1.3 grams of salt across all countries – that’s 520 grams of sodium. The recommended intake of sodium is less than 2,000 mg per day, as suggested by the World Health Organization.

Campbell also notes that the sodium content of foods served at high end restaurants are also way too high as are prepackaged meals one would buy in the supermarket.

Campbell believes it us up to government regulations to cut down on sodium content. There is no need for there to be so much salt intake in a regular diet. 80% of the salt consumed by the average adult comes  from food they are served and not from the salt shaker itself.

There is now a National Salt Reduction Initiative that has been started out of New York. Companies such as Kraft and Heinz have signed on to meet salt reduction targets.

Kosher Food Service on the Titanic

I have always been fascinated with the story of the Titanic – especially as portrayed in countless films about the tragic sinking, 100 years ago. I knew there were Jewish passengers on board but I never actually stopped to think whether they had kosher food or not. My mind just got stuck on the tragic loss of life.

In fact, the Titanic did have kosher food service and it even had a chef responsible for its preparation – Charles Kennell. But there is not really a lot of information about the kosher food service to be found.

Charles Haas, President of the Titanic International Society has said that by the time the Titanic sailed there were kosher kitchens on the White Star, Cunard and German cruise lines. The earliest reference found to kosher food available on a cruise liner was from 1904.

“There’s an article in the Trenton Times in June 1904 and it says, among other things, ‘American Line officials arranged another innovation in the form of special kosher cooks for the Jews. The English will have their meals served separately and their cabins will also be separate from those of the Jews.’ And that was on the S.S. Philadelphia.”

Valery Bazarov, director of family history and location services for HIAS, the Hebrew Immigrant Aid Society, also confirmed the first decade of the 20th century as the beginning of kosher food service on liners crossing the Atlantic. He added that HIAS, which continues to help resettle Jewish refugees to America, established a kosher kitchen at Ellis Island in 1911.

The Titanic hit an iceberg at 11.40 pm on April 14th 1912 and sunk at 2.20 am on April 15th 1912. 2,225 people were on board, 1,512 of them perished that night.

That’s either “crazy” or “so crazy it just might work”. I’m no expert, but I don’t trust the sound of a Frigidaire 12-Cup Coffee Maker. Turmeric Can Prevent Heart Attacks

A new study from Thailand indicates that turmeric can help to reduce the chances of heart attacks in patients who have recently undergone heart bypass surgery. Bypass surgery can actually slightly damage the heart muscle as it is starved of blood flow at points throughout the procedure. This can lead to an increased risk of heart attack.

The pigment in turmeric – a bright yellow color – called curcumin, can help to reduce the risk of heart attack.

Researchers studied 121 patients who had bypasses at the Chiang May University Hospital between 2009 and 2011. 50% of these patients were given capsules containing curcumin four times a day, along with the regular medications. 13 % of the patients who had taken the capsules had heart attacks since the surgery, compared to 30% in those that did not swallow the curcumin capsules. Dr Wanwarang Wongcharoen, who headed the study, calculated that those people who took curcumin capsules had a 65 % lower chance of heart attack. (The different types of surgery were also factored in to this calculation).

Researchers say that the antioxidant and anti-inflammatory properties of curcumins most likely helped to limit the damage in these bypass patients.

This was a small study, and more tests need to be done for there to be any confirmation that this type of spice therapy is effective.

More about Turmeric: Turmeric has a peppery, warm and bitter flavor and a mild fragrance slightly reminiscent of orange and ginger, and while it is best known as one of the ingredients used to make curry, it also gives ballpark mustard its bright yellow color.

Turmeric comes from the root of the Curcuma longa plant and has a tough brown skin and a deep orange flesh. Turmeric has long been used as a powerful anti-inflammatory in both the Chinese and Indian systems of medicine. Turmeric was traditionally called “Indian saffron” because of its deep yellow-orange color and has been used throughout history as a condiment, healing remedy and textile dye.

First Seder in the Homeland

Mivasseret Zion, Israel (April 2, 2012) — The little girls stood on stage holding up a child’s painting of the Ten Commandments, quietly but confidently singing “Who Knows One,” the traditional Passover song about Jewish icons such as the Five Books of Moses, the Four Matriarchs, the Three Patriarchs, the two Tablets that Moses brought from Mount Sinai, and the Oneness of God.

It could have been a scene from any number of school Passover presentations, but these children were new immigrants to Israel from Ethiopia, demonstrating their Jewish knowledge for family members who, with them, are about to celebrate their first Passover in Israel.

This Friday night, an estimated 5,500 members of the “Falash Mura,” the extended family members of Ethiopia’s Jewish community, will hold seders together in absorption centers throughout Israel, sponsored by The Jewish Agency and by the International Fellowship of Christians and Jews. In groups, they will celebrate both Passover and their new lives in Israel, for the first time using a Hebrew haggadah – and, in many cases, experiencing their very first seder.

To prepare, this week, the olim (immigrants to Israel) held model seders in each absorption center, including in the Jerusalem suburb of Mevaseret Zion. With its apartment units stretching out for blocks – punctuated by playgrounds and communal buildings such as a library and auditorium – the Mevaseret Zion absorption complex is by far the largest of The Jewish Agency’s 22 such centers, including 16 that cater specifically to new olim from Ethiopia.

Among the dignitaries who greeted the immigrants were Rabbi Yechiel Eckstein, Founder and President of the International Fellowship of Christians and Jews; Natan Sharansky, Chairman of the Executive of The Jewish Agency for Israel; Colonel Zion Shankur, the highest-ranking Ethiopian in the Israel Defense Forces; Ambassador Belaynesh Zevadia, Israel’s first Ethiopia-born ambassador; and prominent Ethiopian-Israeli singer-songwriter Maski Shabiro, who entertained the group of approximately 100 immigrants with a heartfelt rendition of an Ethiopian folksong.

In fluent Hebrew accented heavily in Russian, Sharansky related his memories of making a seder while imprisoned in Siberia, using water instead of wine and bread instead of matzah (“because what can you do”), and reciting as much of the haggadah as he could from memory. Later, after his release and his own immigration to Israel, he flew to Ethiopia to escort a group of Jews there on their own flight home.

“I didn’t understand a word anyone said,” he remembered, “but when the pilot announced that we were over Jerusalem, everyone cried ‘Yerusalem! Yerusalem!’ and I realized I was part of a modern-day exodus, the return of Jews from every direction – toward Jerusalem.”

Rabbi Eckstein, whose organization is a major donor toward programs that assist Ethiopian immigrants to Israel, earned enthusiastic applause from the participants by sometimes breaking from his Hebrew address to speak in Amharic, Ethiopia’s native language.

Addressing the veteran Ethiopian olim in attendance, such as Colonel Shankur and Ambassador Zevadia, Eckstein said, “It’s not just that we are proud of you, you are also role models. You show the next generation of new immigrants that with hard work, they too can succeed. Don’t let anyone tell you that you can’t.”

“Your job is to work hard,” he told the assembled Ethiopian-Israelis. “And our job is to accept and love you and help you all we can.”

In 2010, when the Israeli government decided to permit the remaining 8,000 members of the extended Ethiopian Jewish community to immigrate, it turned to The Jewish Agency to help prepare the group—made up largely of farmers – for their journey into the modern world. The next year, The Jewish Agency began administration of a complex in Gondar Ethiopia, where future emigres to Israel study Hebrew and learn about modern plumbing and how to shop in a supermarket.

Now, living at absorption centers all over Israel, the adults study Hebrew and Judaism, while the children – after attending classes at regular local schools in the mornings – receive extra academic help in the afternoons through a Jewish Agency program called Yesodot (“foundations”). In their courses, the 5,500 recent immigrants have been studying the stories and symbols of the Passover holiday, learning the haggadah along with an Amharic translation.

In Mevaseret Zion, many of the olim attended the model seder dressed entirely in white, the traditional Ethiopian attire for festive occasions. Colonel Shankur said that although it has been 30 years since he himself lived in an absorption center, the model seder “is still the most meaningful seder I attend.”

After briefly experiencing the highlights of a seder, the participants broke into dance, gesticulating their shoulders in a uniquely Ethiopian dance style.

“In Ethiopia, they ate matzah all year round,” said Yehudah Sharf, Director of Aliyah and Absorption for The Jewish Agency. “Here, it is only on Passover that they eat the ‘lachma anya’ – bread of the poor – because they have so many more opportunities. For them, now, eating matzah truly makes it a night to ask ‘what is different tonight from all other nights.’”

Junk Food Can Affect Mental Health

I always thought that when one was depressed one turned to junk food for comfort. But according to a recent study in the Public Health Nutrition journal it is the other way around. The more junk food one  eats the more prone one is to depression. This study shows that there is an increased risk of depression in people who regularly consume junk foods – pizzas and burgers, doughnuts and croissants.

Researchers (from University of Las Palmas de Gran Canaria, and the University of Granada) also found that people who eat junk food regularly lead a more sedentary lifestyle, are likely to be smokers , and work over 45 hours a week.

The 8,964 research subjects were people with no prior diagnosis of depression and were not on any anti-depression medication. Their emotional health and food intake were tracked for six months. By the end of the study 493 people were depressed or taking anti-depressants. Those who ate the most junk food were 51% more likely to become depressed compared with those test subjects who ate the least junk food.

The Mayo Clinic recently reported on a British study that showed that those people who ate a lot of fried food, desserts and high fat foods had an increased risk of developing depression symptoms whereas those who ate a lot of fresh fruits and vegetables and fish had a much lower risk of becoming depressed.

Yet another study – in the journal PLos ONE – suggested there may be a link between the ingestion of lots of trans fats and irritability.

Junk food is a quick way to have a meal and to satisfy hunger cravings in a fast manner, but over the long term there are many physical and emotional complications that can arise.

The Man-O-Manischewitz Cook Off Winner Is….

On Wednesday, March 28, Manischewitz hosted its 6thannual Kosher Cook-Off at the JCC in Manhattan. Five competitors from around the United States were selected to compete in a challenge sponsored by Manischewitz and Maytag, with a $25,000 grand prize as well as a new kitchen furnished by Maytag. Cookbook authors, chefs, restaurateurs, high school students, and magazine editors were among the attendees who were able to both watch the contestants prepare their dishes in an hour, as well as eat versions of their recipes cooked earlier by Simply Divine, a catering company based out of NYC.

A diverse array of judges was selected to be the authoritative voice at the competition, among them Joy of Kosher’s own Jamie Geller and Food Network’s Claire Robinson. Robinson seemed thrilled to be a part of this competition, and shared a few of her recipes with media using Manischewitz’s new line of All-Natural broth flavors. In the Q & A session that followed, Robinson, who hosts a show on Food Network called 5 Ingredient Fix in which she creates recipes using 5 or fewer ingredients, explained that she believes that the best dishes feature quality and straightforward ingredients.  She shared her recipe for Short Ribs (which can even be made on Passover) and Chicken Pozole (which due to the corn cannot be made on Passover) using Manischewitz broth.

It was this philosophy of using a choice selection of quality ingredients that inspired the competing cooks to create recipes using Manischewitz’s stock alongside fewer than nine other ingredients. Recipes ranged from spins on traditional Jewish foods, Eric Silberman’s Mod Matzo Ball Soup to Italian style dishes, like Jacquie Serabrani-Kesner’s Gnocchi. All recipes incorporated one of Maischewitz’s All-Natural broth flavors, and in most cases, other Manischewitz products.

One thing that fascinated me was seeing the difference between what the chef’s recipes outlined and how Simply Divine prepared the same recipes for “the masses.” It showed me the difficulty cooks sometimes have in translating a recipe for someone else to re-create. The size and shape of various vegetables and noodles, as well as different vessels used to cook and serve the dishes, was extremely different between the competitors’ versions and the catered versions.

And the moment you have all been waiting for is the winner, Eric Silberman’s Mod Matzo Ball Soup (pictured above) earned him $25,000 including a new kitchen. Silberman is a 21-year-old Princeton University student from Illinois who enjoys cooking for his family, especially Matzo Ball soup for his family’s Shabbat dinners. Before he was announced as winner, restaurateur and cookbook author Levana Kirschenbaum said, “He’s cute, he can cook—I vote for him!”  All I can say is what is a really tall 21 year old going to do with a $15,000 kitchen?
