This week all our thoughts turned towards Shavuot, which is only one week away now.  The three day (for most of us not living in Israel) holiday that is fast approaching.  Here on JOK we brought out the cheese plate, we helped you construct one for an appetizer or serve cheese for dessert.  The Cheese Guy gave us a cheese primer and we had so many wonderful lessons to get ready for Shavuot, from blintzes to cheesecake to surviving a 3 day yom tov.  Here are the top 5 articles form the week on our site and below that we scoured the internet for cheesey recipes for more inspiration.

Food Network Star Returns May 13

Are you as addicted to the Next Food Network Star as we are? This reality show returns for its eighth season with some new surprises in store. Bobby Flay and Giada De Laurentiis will be joined by Alton Brown this year and each will serve as mentor/producer to their own  hand selected team of finalists.

This year the judges are entering the race to find and develop the new talent.  Each will hand pick a team of five finalists who they will produce and mentro through the ‘Star’ experience to find one winner who has the personality and the kitchen chops. If you are wondering how they choose their teams, tune on May 12th for the casting special.  Then make sure to cast your vote before July 22nd when the winner will be announced.  

We are curious to see how this new format plays out.  It will be fun to see the former judges competing and maybe even sweating a little.  Each episode will include a “Producers’s Chalenge” where the contestants up for elimination each shoot a segment with their ‘Star’ mentor/producer to be presented to the selection committee in the “pitch room.” Like a last chance to show what they got.  The episodes will include chopped-style battles, a New York Fashion Week food makeover challenge, and a Miami Beachside competition.  And of course tons of guest stars.

The two hour season premier airs Sunday May 13th at 9pm ET/PT with a special casting episode on Saturday May 12th at 9pm ET/PT.  Audience vote will determine winner that will be announced in the season finale on Sunday July 22nd at 9pm ET/PT.

 


 

Do You Have a Fear of Fleish?

Picture this scene: you’re cooking dinner and realllly want to have that piece of shnitzel that’s dangling off of the whole chicken breast. But you hold off.

Or how about this: your friend offers you a taste of her salami that has been drying in the kitchen for 2 months. She never shares but is willing to give you a bite of this aged delicacy. But you hesitate.

Have you ever heard of the term “FOF?” I recently learned that it means “fear of fleishig”—that condition that drives kosher-observing individuals to double- and triple-question their decision to eat something that is meat, or made with meat.  Once you have that one bite, you’re “banned” from having anything dairy for the next 1, 3 or 6 hours. So it’s easier to say no, so that just in case you want a piece of chocolate in the next 6 hours you can go for it.

I now slap myself silly when I fall prey to the genetic (because being Jewish is in my genes) disease. After all, my family’s custom is to wait 3 hours between meals. And guess what, folks: it takes about 3 hours for your body to finish digesting a meal. So you wouldn’t even reallllly be hungry until then.

In my opinion, a bite of perfectly crispy, hot steak is more satisfactory than a slice of American cheese. When you’re spending all of Friday cooking for Shabbat, allow yourself to sample the food you’re making. Not only is it extremely important to
taste the food you are going to serve to your guests, but you also deserve to try it before anyone else!

From the perspective of a dieter, sneaking in those bites while cooking might actually help your efforts at eating healthy. If you are fleishig, you won’t be able to have dairy snacks and junk lying around your house. There are few dairy treats I really would miss, and in most cases, you won’t want them 3 hours later. Holding back from giving into your cravings can help show you what your dieting weaknesses are.

So steal that bite, and have a few more. In 3 hours, you won’t regret it.

Unless, of course, you really need coffee. That I sort of understand.

This week, in fact, yesterday we celebrated Israel’s Independence Day, Yom Ha’atzmaut.  Many of us like to celebrate Israel all the time, because let’s face it, the food is just so good.  Looking back at this week we had some great posts on Israeli food on our site and around the web.

National Pigs-In-A-Blanket Day

Everyone knows what these little babies are, no matter where you are from pigs in a blanket have their place.  Usually found during cocktail hours for celebrations or the fun easy pass around appetizer everyone pulls out of the freezer, thank you, Cohen’s. The kids gobble them up, but so do the gourmands.  They are a true crowd pleaser.

In Israel they have ketchup inside them and call them Moshe Ba’Teiva (Moshe in the Ark), this was confirmed via a poll on facebook and many like to serve it on Parshat Shemot.    In England they traditionally wrap bacon around the dogs in place of a dough and here is our version using beef fry or pastrami, created for the Superbowl, Pigskin Puppies.

Here most of us like it wrapped in puff pastry and served with mustard.   I do believe these mini hot dogs are the precursors to the classic deli roll.  What do you think, am I right? Anyways, in honor of National Pigs in a Blanket day, go ahead and make the classic Pigs in a Blanket for dinner tonight just add a salad or even consider trying them with veggie dogs.  For a nice change on the original try Mini Hot Dog Egg Rolls or swap out the dogs for asparagus and make Fried Asparagus Rolls.

National Cherry Cheesecake Day

If you are wondering what you should make today (with your spare time) then get ready to celebrate National Cherry Cheesecake Day.  There is no debating here, no wondering if you should go for raspberries or oreos, today we celebrate Cherry Cheesecake alone with all its glory.  What is it about cherries and cheesecake that is so enticing?  Is it the bright red contrasted with the stark white of the cake?  Is it the subtle tartness with the almost savory cheesy dessert? Whatever it is people love it so much that it has it’s own day and there is no better way to celebrate than having a slice.

We usually reserve our cheesecake talk for Shavuot (which is only 33 more days), but the only cherry cheesecake on the site is this fun Deconstructed Cherry Cheesecake.   This recipe plays with that tradition by re-imagining cheesecake as an ice cream sundae. With a rich cheesecake ice cream topped with a cherry sauce and graham cracker streusel, it has all the classic flavors of a New York Cheesecake in a fun and different form.

National Jelly Bean Day

Today, Aprill 22nd is and always will be national jelly bean day.  A day to enjoy the the chewy sticky treats kids of all ages love to munch.  Jelly beans date back  the 1860′s, but no one really knows their true origins.  It is believed  that they are descendents of Turkish Delight (have you ever had this?).  The Jelly Belly company revolutionized jelly beans with gourmet flavors starting in 1976 with 8 new flavors - Very Cherry, Lemon, Cream Soda, Tangerine, Green Apple, Root Beer, Grape and Licorice. Food “Deserts” or “Food Swamps?”

As any American who might watch a television talk show, read the New York Times, or even People magazine might know, First Lady Michelle Obama has been hard at work on her campaign to fight childhood obesity, Let’s Move. One of the main issues that Mrs. Obama was targeting was the lack of access to fresh fruits and vegetables in less affluent communities. Policy makers, advocates, and Mrs. Obama herself have been hard at work trying to combat these “food deserts.”

However, a recent study conducted by Dr. Helen Lee of the Public Policy Institute of California has shown that these poor communities are not devoid of fresh produce. While poor neighborhoods she looked at had twice as many fast food restaurants, and three times as many corner stores, as more well off communities, they also had almost twice as many grocery stores and supermarkets! Additionally, Dr. Lee found no difference in weight between children in communities that are financially polarized.

Another study conducted by the RAND corporation produced similar results, adding that what children eat is the same regardless of the distance between their homes and the nearest supermarket or fast food restaurant.

This would explain why despite all of the campaigns to improve access to healthy foods, the obesity epidemic has not subsided. The problem is not a lack of access—Dr. Lee’s study shows that. In my opinion, it is a lack in knowledge of smart food choices, and a lack of effort in preparing food. It is easy to buy Sunchips or baked chips instead of kettle-cooked potato chips, but portions then get out of control. And especially for those of us who keep kosher, it is often a pain to prepare produce, since one needs to take special care in cleaning fruits and vegetables.

Additionally, instead of focusing on access to healthy foods, individuals need to be encouraged to eat healthy as well as exercise. Mrs. Obama does keep this in mind, as she has been advocating for more playgrounds in communities and extended physical education classes.

Lastly, it is simply very hard to change food habits. Kids are accustomed to getting Fruit by the Foot and Chex Mix as a snack. If those were the snacks I had gotten as a kid, then I would not have been pleased with the string cheese, apple, and celery sticks my mother gave me from kindergarten until 6th grade. It is incumbent upon parents, from the get-go, to provide their children with healthy snacks and meals, as well as knowledge about why they receive the food they do.
