Red Star Yeast recently launched a revolutionary yeast for the home baker called Platinum Superior Baking Yeast. Red Star says that this new yeast makes baking professional bread at home a cinch. Many of us make challah weekly or at least regularly and this yeast should make your results even better. Especially when you add whole wheat flour. I tested it out for you on my go-to, regular challah recipe where I use 50% whole wheat flour and the results were very good. Next, I would like to try it with 100% whole wheat flour. i have not been happy w/ baking results when i add some white whole wheat or whole wheat to my bread flour. i would be happy to try this new product by red star.
