The Ultimate Veggie Sliders *Giveaway*
Growing up as a vegetarian, there were two things I could expect to eat at school and community barbecues: Hamburger buns and potato chips.
Yeah, there didn’t tend to be too many veggie alternatives for people like me. Now don’t get me wrong, I really like potato chips. It’s just that something was always missing. Something like…my entire meal.
It would have pretty amazing to have these veggie sliders instead. You don’t have to be a vegetarian to like them, either. You just have to like fresh ingredients brought together in a deliciously flavorful way.
Think roasted sweet potatoes, chopped scallions, and fresh mushrooms sauteed with garlic. I’m in. You?
Here’s how to get them going:
Start with a sweet potato. A big one. Dice ‘im up. You want small pieces so they don’t overtake the little burgers.
While they’re roasting, saute the garlic and mushrooms, then add scallions and sweet potatoes to the skillet and sprinkle soy sauce over everything.
The rest is quick. Mash up some chickpeas and mix that with the vegetables from the skillet, along with some tomato paste, eggs, and breadcrumbs.
Then you pack the stuff into patties and fry them up in just enough oil to get them sizzling and browned. Not more than 2-ish tablespoons, probably.
Let them drain on paper towels and then stick them into those cute little slider buns that everyone loves (I used Hindy’s recipe). Add some tomato or cucumber or lettuce or onion or avocado…
And by all means, don’t forget the chips.

Portobello mushrooms would be my topper. Can’t wait to try this recipe!
Looks delicious. For a topping try sauteing sliced mushrooms,with assorted small pieces of colored peppers, cut Roma tomatoes, fennel seed, 1 tablespoon Worcester sauce, and 1-2 tablespoons of sherry. Saute until done. Could add slices of fresh zucchini or summer squash too.
This is the best idea for dinner for my husband, he loves burgers, and wants to stay healthy too! I would top it with some scallions an avocado dip–YUMMY!!
I’d top it with homemade garlic aioli and tomatoes from my garden.

I would top this slider with a “mini” Greek salad on to some feta chopped cucumber chopper cherry tomato and chopped red onion yum

This veggie burger looks so good as it. I think I’d just add a little mayonnaise and a slice of romaine lettuce.
Looks so tantalizing! my mouth is watering, the perfect summer supper! I would top it with my homemade mayo dill dip… I think it would go along really well!

Black bean salsa. Black beans taste great with sweet potatoes.
I would make it a double decker burger by making some quinoa bergers or spinach burgers. Either one just mix with some eggs then form into burger size. Add a little salt, pepper, garlic and tada! Awesome healthy double decker

I’d have to taste it to check the flavors but I’m thinking some of the following: mozzarella, avocado or garlic-dill sauce, tomato, lettuce, caramelized onions…
I think some ground cashews would be nice on this.
I would top this with a nice thick beef hamburger – I do not believe being a vegetarian is a healthy lifestyle for the long term.

This sounds really delicious and I can’t wait to try it. I would grill or saute onions to go with it. I would also consider a Cesar dressing. There’s also good old ketchup.

Blue Cheese
Definitely guacamole! I love is so much! I’m also a huge fan of red onion so that would have to be on my burger as well. Cole slaw might also be an interesting topper, the crunchiness could be a great addition.
I think I might just leave them as is, or a maybe add a bit of schug to make them spicy!
