In Summer, the go-to dish for me is salad. Sometimes I toss everything together (avocado, egg whites, nuts, craisins, whatever), add lettuce
and dive in. And sometimes I just want a bowl of mixed baby greens with olive oil, a sprinkle of kosher salt and a squeeze of lemon. Salads
are perfect for lunch and dinner. Come to think of it, breakfast too. Also snacks. Load in some lean protein and you’ve got a full meal.

When I eat salad as a main dish I usually want protein in the salad. It just seems more satisfying and hearty without being heavy. My favorite protein to add is Grilled Chicken breast but I also like firm dry tofu seasoned with lots of black pepper and seasoned salt and grilled or pan-fried.
I love having chicken salad for lunch. I make it for my husband as well, he really likes this light, yet filling meal.
I make us salads for lunch daily all year. The best though are in the summer with native vegies. Adore adding strawberries to spinach. Are eagerly waiting for our tomatoes to bear fruit. Sometimes add lean protein too. In the summer tend to do this more
My favorite is to eat a salad with fish in it for seudah shlisheet. The smoked salmon salad above will be a great one to try in the future!

my favorite way to eat salad is as natural,using locally grown produce,and using vegan ingredients for the toppings-dressings(I am a vegan,but if I would win the cheese,have many friends who would love to recieve it!)

I love salad with avocado and salsa for a nice Mexican kick. It doesn’t need any added dressing as the creaminess from the avocado and juice from the salsa create their own dressing.

I have a salad almost every single night. Usually spinach, tomato, cucumber and top it off with a low calorie dressing and either chicken or fish. It sure looks good on my hips!
I have guinea pigs so I grow greens and herbs for them and me year round. Don’t limit yourself to lettuce! There’s a huge variety of seeds available and greens don’t need a lot of space, just a sunny south window. Try growing your own!
I like blu cheese, nuts, seeds and croûtons for crunch, avocado for creaminess and kalamata olives. All veggies are best bought strait from the farm!

I love corn salads, especially for Shabbos since they don’t get limp with dressing and you can toss lots of different things in.

Lately, I have just been using whatever produce and extras I have around and throwing them together in creative ways. I especially love to add cheese, avocado, fruit, and/or something crunchy like nuts or croutons. I also like experimenting with different oils, vinegars, and herbs for dressings.

Salads. and lettuce are wonderful. I love to just make summer sandwiches and use lettuce instead of bread. But I also cook a lot with lettuce, braised romaine, endive or almost any lettuce is great, also wonderful in soups. Add fruits and nuts for something different. or serve after your main entee as is done in many European countries. You always inspire me Jamie.. thanks for all of your terrific recipes!

I love to eat an Israeli couscous salad with baby garbanzo beans, dried cranberries, sliced celery or cucumber (or whatevr veggie I have on hand), and a little pinch of salt. I mix it with olive oil and vinegar. So good!

My favorite salad is a Caprise salad. I use locally grown red ripe tomatoes and sliced Buffalo mozzarella cheese, a few basil leaves, all topped off with a creamy balsamic vinergarette.

During the summer I like grilled chicken breast over a Vietnamese-style rice noodle salad – shredded lettuce, sliced cucumbers, chopped peanuts.
I usually make my own vinaigrettes, especially when my tarragon is exploding out of the yard.
I also like to make my own croutons. It’s a great way to use up mediocre bread. Make a garlic oil with waaaaay too many cloves of garlic, toss with bread cubes, sprinkle with salt and coarsely ground black pepper and a few shakes of jalapeno hot sauce, and bake until crisp on the outside, tossing once or twice. Remember to bake the garlic cloves, too. Either toss them in the salad or sneak them as a snack when no one is looking.
As the farmers market is bursting we like this mix of chopped uncooked broccoli and cauliflower, pistachio nuts, sunflower seeds, dried cranberries, chopped red pepper, chopped sweet onion, and a vinegrette made with rice wine vinegar, olive oil, dash of sugar, salt and pepper. Let it chill for one hour. It is so colorful!
This is great as a side or add cold julienned meats or fish.

Our typical summer shabbat lunch includes many different kinds of salad. Usually we begin with either mock crab salad or fruit salad, then on to 2 or 3 veggie salads, home made chummous and a chicken salad. Dessert is usually “cookie salad” with a variety of cookies instead of just one kind at a time.
My biggest regret is that our local farmers market is on Sunday. Which I do visit so regularly that the ‘knife sharpener guy’ Tony, tells me he misses me if I skip a week!

My latest salad craze is deconstructed falafel. Big bed of romaine topped with cucumbers, tomatoes, a big dollop of hummus, and falafel balls. Garnished with pita wedges, greek olives, turkish eggplant, avocado or whatever else I have around, and then drizzled with a tehini dressing. Goes great with borekas. Yum!

I like making macaroni salad with fresh tomatoes, green and red peppers and sharp cheese.
texture and variety is the key! a salad that has crispy (lettuce), crunchy (cucumber, red pepper), smushy (beans/chickpeas, avacado), juicy (tomatoes), chewy (craisins), tangy (hearts of palm) and sweet (carmelized nuts) is ideal…and a yummy dressing, of course!

I love making a fresh cobb salad! I grill up some chicken breast, boil the eggs, slice up fresh avocados, radishes and any other yummy veggies I have toss it together with crisp romaine and homemade russian dressing. Delicious!

Leftover quinoa makes a yummy salad. I add grape tomatoes and chopped parsley, some fresh lemon juice, olive oil and cumin dressing, and crumbled feta cheese. It’s a great make-ahead salad for seudah shlishit.

Mmm…I love salad!! My favorite way to prepare it is to just put in whatever vegetables I have in the kitchen: mixed greens, tomatoes, cooked broccoli, cooked green beans, kidney beans, olives, etc. and top it off with some feta cheese and some balsamic vinaigrette. It’s a great way to use leftover ingredients. YUM!!
Cheese! Especially goat cheese. I love julienned vegetables and a good vinaigrette. Croutons are also fabulous, and I prefer my lettuce chopped or in smaller bites. If it’s a meat salad it needs lots of veggies!
I like a salad that balances multiple flavor and texture profiles. Dark greens with fruits, nuts, cheeses- salty, sweet, crunchy, creamy- yum!
I prepare a salad for lunch every day for my husband and I. I cut the basic vegetables and throw in a protein. Anything from Salmon, Gefilte Fish, leftover cold cuts (not together!), to Feta cheese. I either make my own dressing or use something I purchased. My favorite though is Romaine with fresh tomatoes and grilled chicken. The best dressing – a bit of lemon juice, oil, salt and pepper. Light and delicious.

My favorite salads are a really a dinner plate thrown together. When I’m tired of the dish separation, I throw the veggies, meat, sauces together to make the best combinations. My favorite way to eat salad is baby spinach leaves with sliced strawberry and diced mango, slivered almonds, topped with a orange juice and honey dressing. Toss lightly and enjoy.

The basis of my salads are romaine lettuce, kale and grape tomatoes to which I add other veggies (peppers, cukes), chumus or tehina as dressing and top with tuna. I feel fullest when I eat the tuna. I love your smoked salmon salad and will definitely try it. I find smoked salmon filling too. I lost 12 pounds before my son’s wedding eating these salads.

We love broccoli salad – you know, the one with fresh broccoli, diced red onions, seeds, nuts, craisins, and a light dressing. Can be pareve or dairy. It’s very forgiving; vary the quantities or varieties of ingredients, make it a day ahead, forget one of the dressing ingredients, it tastes good anyway. Perfect for company or just family. Can be made year-round. Should be in every bride’s repertoire!
I love a salad with spinach, mixed greens, fresh mozzarella (I mean really fresh and soft – the little balls that melt in your mouth!), tomatoes, grilled chicken and a light honey mustard vinaigrette. Lots of black pepper to top it off!

My favorite way to eat salad is to pick it from my little garden of artisan lettuces, very young and tender leaves and immediately rinse it and serve it with homemade kefir ranch dressing and whatever I want to add, like chopped eggs, croutons, heirloom tomatoes if I have, anything I can find.

My favorite way to eat salad…actually, for breakfast. I like to make a plate of artisan baby spinach, sliced-in-half grape tomatoes, thinly sliced celery, (wide) grated cheese (type varies by my mood), a little drizzle of honey and all of this topped with an egg (method of preparation again depends on my mood, but poached or over easy is outstanding).
My Fave way to eat a salad is gluten free, lots of raw veggies, radish, carrot, tomato, green & red bell peppers, green & black olives assorted lettuce & spinach, finely shredded Mozzarella cheese & a little Italian dressing. Sometimes I add some grilled chicken breast chunks.
On summer shabbatot my menu consists primarily of salads…chicken salad (not the creamy kind), taco salad, fruit salad, pasta…etc. Lots of yummy and fresh ingredients that don’t heat up the kitchen or require a hot plate. They’re always a HUGE hit.

Salads are the best for the summer time. I like making macaroni salad and potato salad. It lasts for a few days and can be a meal by itself. I also like a good garden salad too. We usually always have a garden salad in the fridge.
I just had a lovely salad for dinner last night. It had a mix of greens and spinach (no iceberg!). I topped it off with mushrooms, red/yellow pepper rings, cucumbers, grape tomatoes, baby carrots, fresh green peas, just a few black/green olives and a very light sprinkling of feta crumbles and shredded Asiago. I sprinkled some sunflower seeds and almond slivers. It was dressed with just a bit of blue cheese dressing diluted with olive oil and balsamic vinegar. For protein, I added a couple of spoonfuls of Israeli couscous salad and a multi-bean salad (kidney, edamame, garbanzo, green bean, thinly sliced onions, bell pepper, and celery). It was yummy!:-)

I change ingredients according to what I have on hand,but my favorite salad has:Baby spinach,fresh mushrooms,olives,tomatoes,avocado and sunflower seeds mixed with some Italian dressing.
Wheat Berry, Lentil & Brown rice with whatever I find that look good at the farmers market with a balsalmic and olive oil dressing, don’t forget the fresh herbs!

I love salad and love to start with romaine leaves, I then add diced red, yellow and orange peppers, grape tomatoes, red onion, green olives and of course, some CHEESE! I think I’m part mouse I love cheese so much! The Cheese Guy had a special, but small run, of sharp cheddar that was cholov yisroel and was beyond delicious! I dress my salad with some dressing from Walden Farms to keep the sugar and fat calories down.

I like to stuff a tomato with chicken salad made with raisins and curry powder.
I eat salad every way and every chance I can. It’s a perfect meal on Weight Watchers and I use Walden’s sugar free/fat free dressing so I can load it on. Add a little chicken or a handful of fat free feta, and you have a meal with protein and very few WW points. Yum!!

This is the time of year when we have the most amazing summer salads! We have organic gardens here at home, and our salads are based on what’s ready to go! Tonight we’ll enjoy spinach, arugula, lettuce, baby red onions and radishes in our salad, as well as a few raspberries with a raspberry vinegarette. Next week, new choices, new treats and new delights at our favorite time of the year here in west central Wisconsin. Hurrah for my husband for creating mini irrigation systems for our raised beds; we will survive the drought and have much to share with our food pantry in town!

i love to use salad as a base for a meal instead of bread! fried egg over salad, or deli etc!
I love summer salads. My favorite is to take the leftover grilled veggies and slice them up, toss in a handful of feta and dress with some balsamic and olive oil. Yum! Thanks for the chance to win.
